Aegean Fava (Split Pea Purée)
A velvety Aegean meze made from split fava beans, garnished with dill and onion.

Ingredients
- 2 cups dried split fava beans
- 1 onion
- 1 potato (diced)
- 1 tsp sugar
- 1/3 cup Pure Verda extra virgin olive oil
- Salt, dill, lemon
Preparation

Rinse the favas and add them to a pot with the onion and potato.

Add water to cover by about three fingers, plus salt and sugar.

Simmer over low heat for 40-45 minutes until everything falls apart.

Blend while hot and add the olive oil until smooth.

Pour into a mold and chill; turn out and serve with dill, olive oil and lemon.
Tips
- Red onion and plenty of olive oil on top suit it beautifully.
