Ingredients

  • 2 cups dried split fava beans
  • 1 onion
  • 1 potato (diced)
  • 1 tsp sugar
  • 1/3 cup Pure Verda extra virgin olive oil
  • Salt, dill, lemon

Preparation

    Rinse the favas and add them to a pot with the onion and potato.

    Add water to cover by about three fingers, plus salt and sugar.

  3. 3

    Simmer over low heat for 40-45 minutes until everything falls apart.

    Blend while hot and add the olive oil until smooth.

  5. 5

    Pour into a mold and chill; turn out and serve with dill, olive oil and lemon.

Tips

  • Red onion and plenty of olive oil on top suit it beautifully.
