Olive Oil Braised Leeks

Ingredients
- 4 leeks (sliced into rounds)
- 1 carrot (grated)
- 2 tbsp rice
- 1 tsp sugar
- Juice of 1/2 lemon
- 1/3 cup Pure Verda extra virgin olive oil
- Salt
Preparation

Sauté the carrot in olive oil for 2 minutes.

Add the leeks and toss gently, cooking until they release their moisture.

Add the washed rice, sugar, salt and a little hot water.

Cook covered over low heat for 25-30 minutes.

Add the lemon juice and remove from heat; serve once cooled.
Tips
- You can use bulgur instead of rice.
